Spinach and Green Lentil Dahl
Just in time for Winter is this spinach and green lentil dahl. Combining a medley of spices with hearty lentils and creamy coconut milk, this dahl is perfect as a cosy meal to share with pals!
You’ll need:
Olive oil to saute onion
1 red onion, diced
2-3 cloves of garlic, minced
1 knob of ginger, minced
2 teaspoons cumin seeds
1 teaspoon turmeric powder
1 teaspoon garam masala
1 tablespoon curry powder
1 cup rinsed green lentils
½ cup rinsed red lentils
1 can of chopped tomatoes
1 can of coconut milk
A few handfuls of roughly chopped spinach
1 cup of water
Salt and pepper to taste
Steps:
Saute red onion for a couple of minutes until softened. Add garlic, ginger, and spices and cook for a couple of minutes.
Add green and red lentils, water, tinned tomatoes, and coconut milk and bring to a boil. Lower heat and simmer, covered, for 25 minutes or until lentils are soft. Add more water if the mixture looks too thick.
Once cooked, take off the heat. Add roughly chopped spinach and season with salt and pepper.
Serve with rice and enjoy!
